Stuffed Pepper Soup
Servings 6
Ingredients
- 1 lb. ground beef or chicken
- 2 Tbsp. olive oil
- salt and pepper
- 1 small onion
- 1 red pepper, chopped
- 1 green pepper, chopped
- 2 cloves garlic
- 2 14.5 oz. cans diced tomatoes
- 1 15 oz. can tomato sauce
- 1 14.5 oz. can beef broth
- 2 ½ Tbsp. chopped, parsley
- ½ tsp. basil
- ¼ tsp. oregano
- 1 c. long grain rice
- cheese
- parsley
Instructions
- In a small skillet, cook meat in 1 Tbsp. oil & season with salt and pepper. Drain (if cooking with beef).
- In large pot, heat remaining oil and then add onion & peppers, sauté 3 minutes. Add garlic and sauté 30 seconds. Pour in tomatoes, tomato sauce, broth, parsley, basil, oregano & cooked meat. Bring to a light boil, reduce heat to low, cover, and simmer 30 minutes.
- While soup simmers, prepare rice. Once soup is done, stir in desired amount of cooked rice into soup.
- Can top with cheese and parsley
