Stuffed Pepper Soup

Ingredients

  • 1 lb. ground beef or chicken
  • 2 Tbsp. olive oil
  • salt and pepper
  • 1 small onion
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic
  • 2 14.5 oz. cans diced tomatoes
  • 1 15 oz. can tomato sauce
  • 1 14.5 oz. can beef broth
  • 2 ½ Tbsp. chopped, parsley
  • ½ tsp. basil
  • ¼ tsp. oregano
  • 1 c. long grain rice
  • cheese
  • parsley

Instructions

  • In a small skillet, cook meat in 1 Tbsp. oil & season with salt and pepper. Drain (if cooking with beef).
  • In large pot, heat remaining oil and then add onion & peppers, sauté 3 minutes. Add garlic and sauté 30 seconds. Pour in tomatoes, tomato sauce, broth, parsley, basil, oregano & cooked meat. Bring to a light boil, reduce heat to low, cover, and simmer 30 minutes.
  • While soup simmers, prepare rice. Once soup is done, stir in desired amount of cooked rice into soup.
  • Can top with cheese and parsley
