Chicken Noodle Soup

What is more comforting than chicken noodle soup?

I came down with COVID for the first time last Friday. One day our daughter-in-law texted and asked what kind of soup that we liked. For me it was a no brainer, ‘hearty chicken noodle soup’.

Time went on and we thought nothing of it, but we got a knock at the door and a driver left a package for us. It was a package of rolls and two bowls of chicken noodle soup from Kneaders.

So delicious with homemade noodles. So very comforting.

I love to make chicken noodle soup for my family. It is a classic full of carrots, celery, chunks of chicken and noodles in a delightful chicken broth. Crush up some saltine crackers in it and chow down. Savor each bite.

I have made homemade egg noodles before, but I mostly us packaged egg noodles. Here is the most yummy recipe. Give it a try.

Slow-Cooked Chicken Noodle Soup

Servings 12 cups

Ingredients

  • 2 1/2-3 lbs. chicken parts Whole chicken, cut up, or all breats, or all legs or thighs.
  • 1 med. onion chopped
  • 4 carrots sliced
  • 2 celery ribs sliced
  • 2 T. dried parsley flakes
  • 1 T. salt
  • 1 t. dried basil
  • 1/2 t. ground black pepper
  • 1/4 t. dried thyme leaves
  • 2 c. uncooked wide egg noodles
  • 1 c. frozen peas optional

Instructions

  • Wipe the chicken pieces with damp paper towels and discard the towels immediately to avoid cross-contamination. Trim off excess skin and fat
  • Put the onions, carrots, celery, parsley flakes, salt, basil, peper, and thyme in a large slow cooker. Place the chicken pieces on top. Add water to cover, Place lid on the slow cooker and cook on low heat 8-10 hours or on high 4-6 hours.
  • Thirty to 60 minutes before serving, remove the chicken pieces with tongs. Then they are cool enough to handle, remove the skin and tear the meat from the bones and shred it. Return the meat to the pot. Add the noodles and cover and cook on high heat for 30-45 minutes.
  • Just before serving, stir in the peas, if desired, until heated through. Season to tast with additional salt and pepper.
