This was a longtime favorite growing up at our house. so yep, I just had to share.

Chicken and Dumplings

An old-fashioned favorite

Ingredients

  • 1 3-4 lb. chicken, cooked and cut up
  • 8 c. water or chicken stock
  • 3-4 carrots, sliced
  • 3 stalks celery, sliced
  • 1 onion, diced

Dumplings

  • 1 c. sifted flour
  • ½ t. salt
  • 2 T. lard
  • 1 egg, beaten
  • c. milk

Instructions

  • Put the soup ingredients into a pot and turn on high as you put together the dumpling ingredients.
    Sift together dry ingredients. Cut in lard with pastry cutter or use 2 knives, until mixture is crumbly.
    Mix together egg and milk and flour mixture.
    Stir only until flour is dampened. Dough will be lumpy.
    Drop by spoonfuls on top of boiling soup.
    Cover tightly and steam 15 minutes without removing cover.

Cozy up and stay warm.
